Carol, thank you so much for your post. I had similar issues. I also tend to let my mental status be swayed by the scale. Like you I need to remind myself that we are in this to be healthy! To mitigate some of my mental thought processes I weigh in less and I will only measure myself once a month. I still hit peaks, so I just have to remind myself that I might have weighed myself during a valley last time!
