This is the perfect time to not only take care of your needs and get your family doing healthy eating at the same time. You may have to add carbs, potatoes, rice and bread for them, but the addition of healthy vegetables can get them pointed in the right direction and help you avoid doing double work making multiple or different meals.
For you, planning your menus in advance, measuring foods, keeping a journal whether online or in writing an-6d drinking the right amount of water (whether flavored or plain) will be crucial.
There are alot of recipes to try and become creative, and most are geared for 4 to 6 servings. The Taco Spaghetti Squash and Chili recipes will probably be a hit.
