Ahi Tuna Avocado Poke
INGREDIENTS
4 ounces sashimi-grade tuna, cut into small cubes
1 tablespoons finely chopped cilantro
½ teaspoongrated fresh ginger
¼ jalapeno, minced, optional
2 tablespoons shallot, minced
1 ½ teaspoons low sodium soy sauce
1 ½ teaspoons sesame oil
¼ avocado, cut into small cubes
2 -3 lettuce leaves
DIRECTIONS
Combine the tuna, cilantro, ginger, jalapeno if using, shallot, soy sauce and sesame oil in a bowl; toss gently. Cover and refrigerate for at least 1 hour or up to 2 hours.
Just before serving, fold in the avocado. Scoop 1 1/2 to 2 tablespoons of the poke onto each on lettuce leaf. Serve.
NOTES
For dinner, may serve with crackers such as Mary’s Crackers…remember to add calories, and stick to 30 calories.
