Hey all,
I made egg salad tonight using nonfat Greek yogurt. With 3 eggs I added some mustard (less than 1 tbsp), vinegar(less than 2 tbsp), salt, pepper and chopped scallions. Vary as you see fit.
I needed a little crunch so I ate it with a WASA cracker. Perfect!
I didn’t want the fat in the avocado recipe online so this is another option.
