What non-dairy substitution can I use for greek yogurt?
That is a tough one, and it depends on how you plan to use the yogurt. So say as a sweet treat or breakfast, you could try this:

I am thinking for just a plain non-flavored variety you could just do the coconut milk and gelatin, no other flavorings… I am doing my own grocery shopping today so when I am there I will take a look at any store-bought dairy free options! It is hard with store-bought as they put a TON of other ingredients into dairy-free options.
