Hey Folks!
I just tried the salmon dinner with dill sauce tonight. It was a hit. I’m kind of an amateur chef, so I monkey with recipes and I tend to look at someone else’s idea as a guide that I rarely follow directly. No offense to those posting recipes! That’s just how I roll!
I used steelhead trout instead of salmon. I drizzled fresh squeezed lime juice and lime zest on the uncooked fish. Added some chopped fresh parsley and dill with salt and pepper. I let that marinate while I fixed other parts of my dinner. The yogurt sauce was a hit with the guests but my fish was yummy enough without it. I added a bit more vinegar to the asparagus.The other guests had rosemary mashed potatoes- so I could get rid of them! We also had garlic green beans and salad with my homemade pickled cherry tomatoes.
Instead of doing dessert I made pineapple “boats” with everything cored out and filled them with different fruits.
My first dinner party on the program was a total success! No complaints about lack of flavor or lack of variety. I did kind of miss the bigger spreads I usually do for appetizers.

February 25, 2017 at 6:05 pm #12934Thanks! I’m in the twin cities. I love cooking! That is why a diet on bars and shakes wouldn’t work (for many reasons) because I would miss fixing meals. If you are near Minnesota come on over!

AnonymousInactive@Karma Coins: 0I’m a little south (Texas) but I sure love to cook too. I’m afraid my talents pale compared to yours. I’m eager to try new things and experiment with new spices and flavors so I love finding delicious sounding recipes and tweaking them for maximum taste. It has been a wonderful challenge to incorporate fun recipes into my healthy eating lifestyle.
