Is acorn squash allowed in phase 1?
November 7, 2016 at 9:20 pm #9998No it is not, it has too high of a carb count and too low of a fiber count for the ratios that we want to have everyone in Phase 1. Zucchini and summer squash are non-starch options though. Is there a particular recipe that you are wanting to make that uses this? Maybe I could help you find an alternative.

November 14, 2016 at 6:23 am #10152Roasted Acorn Squash with a Tasty Sage Beef Stuffing has an adjustment of reducing the Beef to make it a Phase 1 dish. That is what is stated in the Recipe at the bottom. Is is ok or not?
November 14, 2016 at 2:28 pm #10159Renee, I apologize for that confusion. I have gone and edited that particular recipe as we have decided acorn squash to not be a phase 1 food. It is kind of a grey area food as the glycemic load is not quite so high, but at some point we have to cut off the starchier carb count as it does have an effect on weight loss results. That said, listen to your body and if you hare having results regardless of eating some acorn squash every once in a while, then it won’t be a problem. In that particular recipe you could substitute zucchini or spaghetti squash to get a similar taste profile.
