Anyone else having difficulty eating 4 veggies a day? I am. Can add an extra fruit but vegetables were never my strong point.
I sometimes don’t manage four veggies either. It helps to eat a salad every day. I’ve also tried making veggies part of my snack, and pureed well-seasoned cooked veggies can often be added to a dish as a “sauce” or added to a soup base.
Grinding them up small and incorporating them into meals is a great way to get them in as opposed to a side dish or eating them raw.
Today I took stir fry veggies and then made a 2 egg omelet with them.
